INGREDIENTS
2 cups diced or chopped cooked turkey
1 cup diced Granny Smith apple
¼ cup chopped cashews
¼ cup chopped celery
1 cup mayonnaise
2 Tbsp. chopped green onion
1 Tbsp. mild curry powder
1 tsp. lemon juice
Lettuce, crackers or toast points, for serving
PREPARATION
In a medium bowl, combine the turkey, apple, cashews and celery.
In a separate bowl, mix together the mayonnaise, green onion, mild curry powder and lemon juice. Pour the dressing over the salad and toss until coated.
Serve on a bed of lettuce or with crackers or toast points.
