• Whisk together the olive oil, soy sauce and vinegar.

• Add lemon juice to taste.

• Gently toss the microgreens with enough vinaigrette to lightly coat the greens.

Note: This dressing also works well with pea shoots.

2 Tbsp. extra virgin olive oil
1 1/2 tsp. soy sauce
1 Tbsp. rice vinegar
Lemon juice to taste
2 oz. microgreens
